Coq Au Vin

2 cups frozen pearl onions
4 slices bacon, cooked and crumbled (can buy large packages of pre-cooked)
1 cup sliced mushrooms (canned ok?)
1 garlic clove, minced
1 tbs dried thyme leaves
1/8 tsp black pepper
6 boneless chicken breast halves
½ cup dry red wine
¾ cup chicken broth
¼ cup tomato paste
3 tbs flour

Combine onions, bacon, mushrooms, garlic, thyme, pepper in a Ziploc. Combine chicken, wine, broth in another Ziploc. Tomato paste & flour in another bag. Noodles? or Spaghetti in another bag?

Layer ingredients in slow cooker: Onions, bacon, mushrooms, garlic, thyme, pepper. Then chicken, wine & broth. Cover, cook on low 6-8 hours. Remove chicken & vegetables, cover and keep warm. Ladle ½ cup cooking liquid into small bowl. Cool slightly. Turn slow cooker to high. Mix reserved liquid with tomato paste and flour until smooth. Return Mixture to slow cooker, cover and cook 15 minutes or until thickened. Serve chicken, vegetables, and sauce over noodles.
